“A Carrot Should Taste Like A Carrot!”

Owner/Chef William Brunyansky likes to keep things simple and always strives to make the best of simple things. Born and raised in St. Catharines, the Chef-Owner combines skills honed in his own backyard with a wealth of international experience. He has worked in some of the worlds most highly acclaimed kitchens, including the AAA 5-Diamond Mobil 5-Star Ritz Carlton in Naples Florida, 2 & 3 Michelin Star Restaurants Le Gavroche with Michel Roux, Le Manoir aux Quat Saisons with Raymond Blanc, and Petrus with celebrity chef Gordon Ramsey. At home he mastered his craft at The Prince of Wales Hotel, studying Master Chef Lee Parsons. Chef William received the CAA-AAA 4-Diamond Award for cuisine just three months after assuming the leadership role in the kitchen at The Charles Inn in Niagara-on-the Lake. This is were he evolved and perfected his craft.

Entrepreneur and culinary wizard Shannon Lindsay joined as partner with William in August 2014. She brought with her an exciting vision in all aspects of the operation. Shannon’s culinary talents and influences are shown throughout the menu, & has quickly earned a reputation as a sous-chef under the leadership of Chef William. Together they owned & ran the Panini Cafe for almost 3 years when they both decided that the restaurant was so much more than just paninis & coffee. July 2016, William & Shannon changed the name to Karma Kameleon Gastropub to reflect some more diverse dishes, as well as their well loved classic favourites such as the “Lobster Grilled Cheese”.
